First, read the flame show safety page. Safety is always first.

Technical Summary:
We are injecting precisely shaped and positioned gas flows into a flame in order to manipulate the shape and appearance of the flame in specific ways.
We then change those parameters over time (flow rate etc.) to change the temporal appearance of the flame, usually synchronizing to an audio source.

ASIDE: Flames used are paraffin oil/wick based, and the only gas used is air. Everyone asks about using other gases. This would, of course , be possible but it would also be much more dangerous and would require vigorous engineering solutions to assure safety. Do not attempt to use gases other than air.
